This week we have the pleasure of breaking bread with Tommy Matthews. Originally from Yorkshire, Tommy made his way to Brum via Australia. While in Australia Tommy worked in pubs & bars to meet people & travel.

Although a fully trained accountant, Tommy caught the hospitality bug and decided to make a career in the sector. After a while of working for a giant commercial chain bar, Tommy got a big break getting a job at the illustrious Edgbaston Boutique Hotel.

The fancy hotel was renowned for its cocktail offering. It stood out on its own as the only place making quality drinks at the time. This took Tommy’s bartending skills to another level.

Tommy worked his way all the way up to bar manager of the Edgbaston. Continuing their elite cocktail tradition and finding his management style. In 2019 Tommy’s friends Katie Rouse & Jacob Clarke were getting ready to open their new bar (Couch). Tommy couldn’t resist the opportunity to work on this exciting project with his mates, so left the hotel to help them get started.

Since its opening Couch has become one of the greatest cocktail bars in the Midlands & even won national plaudits. The three friends serve top-quality drinks in a fun relaxed way. Couch has become Stirchley’s equivalent to Cheers.

Passing Fancies

Tommy has always had ambitions of owning his own bar. The talented bartender was completely honest about this when he joined Couch. So after looking for a suitable venue for what feels like forever, Tommy finally has his own space. In the heart of the historical custard factory.

The original factory that once made Bird’s Custard. The famous powdered custard created by pharmacist Alfred Bird. The custard was invented out of love. Bird’s wife craved desserts but was unable to eat them due to her allergy to eggs.

Passing Fancies is also created out of love, Tommy beams. Theirs a passion to bring the best of everything to the new bar. Awesome cocktails, awesome beers & awesome food in an atmosphere reminiscent of every kitchen at every house party you’ve ever been to.

Believing it is always better to work with friends Tommy brought on board the super talented multi-award-winning duo of Matt Arnold & Eve Green. The pair share Tommy’s philosophy of putting people first & creating somewhere where people really want to work. This radiates through the bar & creates an uplifting happy atmosphere.

This week we have the pleasure of breaking bread with Jack Brabant. Jack first encountered street food when a work project took him down to London. It was a lightbulb moment for Jack. He had found where all the old ravers started hanging out, now that they had matured.

Street food events were popping up all over London. Serving awesome food from trailers & gazebos, but it wasn’t just about the food. Live DJs and musicians created an amazing atmosphere. “It was just a banging night out”.

What Is Digbeth Dining Club?

After falling in love with the London street food concept Jack got to work with creating something similar in Brum.

Digbeth became the chosen location to launch this new concept. An area of the city dominated by old-fashioned boozers & industrial warehouses, Digbeth Dining Club was about to change everything.

August bank holiday 2012 was set for the first event. With the help of a few friends, & a ton of enthusiasm Jack managed to convince some traders & DJs to come on board. The event was a huge success. Attracting more than six thousand guests. Jack was elated, thinking they had cracked it.

The coming winter months were a shock to the system, & events struggled to draw anywhere near the same crowds. Undeterred Jack carried on hosting weekly events. Believing that the concept would eventually take off.

Fast forward to 2020 & Digbeth Dining Club is a weekly, multi trader venue open four days a week. A variety of traders serve restaurant-quality food. Many use the same suppliers & producers that the city’s Michelin Star kitchens use. It’s a highlight of Birmingham’s food scene visited by thousands every week. Everything was flying, but then in March 2020, Covid happens.

Covid was tough on everybody in hospitality. The rules meant it was impossible for Digbeth Dining Club to operate. Jack & his team had to find a new venue. Somewhere more versatile, where they could quickly adapt to the ever-changing covid restrictions. This came in the form of a 10,000 square foot ex printworks in Hockley.

The new space meant they could get closer to their roots. Hosting more events & incorporating different aspects into the experience. There’s Cafe Artum, a bar/coffee shop that sells vinyl records. A monthly craft market, which creates a real buzz around the venue, and of course a rotating roster of street food & DJs. Hockley Social is one of the best days out in the city and one that we as Brummies are very proud of.

This week we break bread with Chef David Taylor. Such an incredibly talented chef. David started his career at Michelin Star Gordon Ramsey restaurant Maize in London. After a tough learning experience, he returned home to Brum. Under the mentorship of Glynn Purnell David flourished, working his way up to sous chef.

David left Purnells hungry to experience other cuisines & cultures. His first stop was the windy city, Chicago before heading to the big apple. The young chef learning at Michelin star kitchens along the way.

Denmark, Sweden & Norway were the next destinations for David’s journey. Learning a completely new style of cooking. Particularly at 3 Michelin star Maaemo in Oslo. It is here that the talented chef learned about the importance of telling a story through your food. Meeting the farmers & producers became a regular occurrence. Hearing the stories, the history and understanding the love they put into what they produce inspired David.

Set in a stunning eleven-acre woodland park in the heart of Moseley, Moseley Folk is the Midland’s biggest family-friendly folk & arts festival. The festival takes pride in bringing a lineup that showcases a vast variety of artists. From traditional to well-known international acts, Moseley Folk has something for everyone.

What Is Mostly Jazz, Funk & Soul?

Mostly Jazz is a result of the success of Moseley Folk Festival. Excited to bring a different genre to the beautiful Moseley Park. It was important to stay true to the family-orientated nature of their first festival. Notable artists over the year include The Specials, The Jacksons, Burt Bacharach & Public Enemy.

As the festivals have grown so has their food offering. Not content with the usual over priced poor quality food often found at festivals. Moseley Folk & Mostly Jazz have the best independent food traders. With the likes of O.P.M, Bonehead, Zindiya & The Seafood Shack you could mistake this for a food festival.

This years festival takes place from the 2nd to the 4th September. It promises to be one of the best yet, with a variety of different artists from all over the folk genre. Some of the acts include Supergrass, Seasick Steve, The Coral & John Cooper Clarke.

Chloe left school focused on becoming a chef. After her time at UCB Chloe started building her experience. Training & working in a variety of kitchens at every level, from cafes to Michelin Star. After a couple of successful pop-ups, Chloe decided it was time to work for herself. She took on the lease of a building in the awesome village of Stirchley. What started out as a space to host pop-ups & events for the women in hospitality group. The space evolved to become a charming neighborhood restaurant called Verbena.

Sarah studied science at uni. Hosting dinner parties for her friends became the only part of uni she truly enjoyed. Sarah decided to leave university to follow her passion full time. Working in a restaurant kitchen Sarah found that she enjoyed the pastry section the most. Working at Resorts World Sarah learned from a team of mega talented pastry chefs. Unfortunately, the pandemic closed the kitchen she was working in. Chloe invited Sarah to help her get Verbena up and running when they bumped each other on Stirchley high St. The pair knew each other through the women in hospitality group.

What Is Verbena Stirchley?

Verbena is a beautiful relaxed restaurant serving simple modern dishes that taste incredible, at a very affordable price. Chloe opened the restaurant with the aim of doing things differently. Determined to move away from the high stress angry kitchens found in some restaurants. “I wanted to create a restaurant people want to work in.” Declares Chloe, Sarah quickly replies telling us how refreshing it is to work somewhere that’s kind and encourages you to be creative, and helps you be at your best. The ethos radiates through the whole team creating a loving warm restaurant that you want to visit often.

What Is Attic Brewery Stirchley

To avoid paying top whack for beer mates Sam & Oli became interested in home brewing. Before long Sam was fermenting grains in a simple homebrew kit in the Attic of his student house. Sam continued to brew the whole time he was at uni, with Oli often being the guinea pig for the mixed bag of beers he created.

After a time in a job, he didn’t enjoy Oli was convinced to come to Brum to meet Sam & make plans to open a brewery in Birmingham. Eventually settling on an industrial unit in the exciting village of Stirchley on the outskirts of Birmingham.

The unit is the perfect fit for Attic Brewery. Enough room to house the giant chrome tanks with room to grow with the company. The other half of the unit is the taproom. A place for customers to sample the freshly brewed pints as well as hosting markets, events & street food pop-ups

Who Is Samuel Boulton?

While studying at uni Sam began working in bars, gradually becoming more & more interested in the cocktail & mixology side of the industry. This ignited a passion in Sam and after a couple of jobs, Samuel decided that working for somebody else isn’t for him and he needs to be his own boss.

After borrowing some money from his family Vanguard was born. The Jewellery Quarter bar Sam launched with a budget of just £1800 went on to become a favorite for many Brummies with their focus on mead based cocktails making it different from everywhere else.

The Pineapple Club

The historic Great Western Arcade in the heart of Brum city centre is where you can find Samuel Boulton’s second venture. After a couple of years with Vanguard Sam decided they had outgrown the upstairs venue & opened The Pineapple Club. A uniquely stylish bar that offers great food as well as well made premium cocktails.

Shibuya Underground

Sams’s latest opening is the brand new Shibuya Underground. A project that has allowed Sam, a certified Sake sommelier to express his love of Japan & it’s culture. The cozy bar seats very few & offers only two 6-course tasting menus, a sake menu or a Japanese inspired cocktail menu. The interior is incredible and feels very authentic making you feel like you are sitting in a bar in Tokyo.

Who Is Chef Rob Palmer?

Birmingham native Rob took his passion for food & started cooking in the kitchens of some of the best known hotels around the city. The young chef got his first taste of the finer end of cooking working at 2-AA rosette forest hotel Dorridge. (now Butchers Social)

After a few years of going through the ranks at the forest, Rob moved on to the exciting Peel’s restaurant. Under a couple of head chefs, Rob kept his head down grafting & learning from all of them until it was time for him to step up & lead the kitchen.

As head chef Rob Palmer took everything he learned & merged it with his restrained style of cooking, making sure everything on the plate made sense & brought something to the dish. An approach that won the restaurant acclaimed praise culminating in a Michelin Star.

Covid brought about a lot of time for people in the industry to reflect on how they work & do things, unfortunately, a lot of people left the industry. Thankfully Rob went the other way and made plans to open his own restaurant, deciding it was time for a change.

A few months and negotiations later & Rob has his new place, named Toffs after his dad, in the heart of Solihull town centre. Other then some awesome street food & a couple of decent independents Solihull is flooded with mediocre chains. Toffs ingredient led quality tasting menus will be a much needed breath of fresh air in the town.

We break bread with the excellent reigning Masterchef Professionals Champion Daniel Lee this week.

Who Is Masterchef Professionals Champion Daniel Lee?

It felt like this talented Brummie chef come out of nowhere to win the latest season of hit BBC show Masterchef Professionals. However, for Dan, Masterchef was a chance to display all the hard graft & experience with different kinds of cuisine & ingredients that he picked up in his years working around the world.

After training at UCB Daniel got the itch to go travelling, finding work in New Zealand before using his career as a way of seeing the world. From ski lodges to cruise ships Dan gained experience, learning something everywhere he went, even if the job wasn’t enjoyable.

The young chef settled in Singapore, a city that took a piece of his heart & made a huge impression on him. Even though he was working in Michelin Star epic restaurants, it was the Hawker Yards selling affordable amazing street food to everybody that really inspired Dan. Most of his dishes on Masterchef Professionals were inspired by the hawker yard & presented in a more refined way.

What Made Daniel Lee Enter Masterchef Professionals?

Dan came home to Hall Green in Birmingham at the start of the covid pandemic to be closer to his family. While hospitality jobs were scarce due to lockdown Dan kept busy working in his local supermarket. When one day he spotted a post on social media for chefs to enter Masterchef. Always looking to challenge himself Dan went for it.

The road to the final was a bit shakey for Dan, but he improved every episode. With every positive comment from judges, Monica & Marcus Dan gained confidence in his own ability & in his style of food.

We decided to get Wine Freedom GM Vic & Events Manager Jana on the podcast & tell us all about the exciting nights & events going on at the bar including an art exhibition by super talented artist Katie Fishlock, Wine flights made up of wines made by female owned wineries as well as a female singer-songwriter performing.

As well as talking us through what we can expect from Wine Freedom Jana & Vic gave us an honest account of what it’s really like working in the industry as a woman, as well as offering their thoughts on why there aren’t more women at higher levels of hospitality.
