Hello & a very warm welcome back to the Birmingham food podcast breaking bread. Co-hosted by food-obsessed mates Liam & Carl, Breaking Bread gives you long-form interviews & discussions with the incredible people that make Brums food scene so amazing. This week we talk to the brilliant Dan & Jack.

After getting into the food industry with a passion for food, Dan & Jack’s careers took them down a more office-based, corporate food route. After finally having enough of the paperwork, the lads decided it was time for them to get back into the kitchen and start their own food business.

You Want A Peacer Me

Convinced it was time to set off on their own & follow their passion, Jack & Dan started looking for a concept. Inspired by the New York style grab & go pizza shops and seeing a gap in the Brum food scene for a slice shop similar to the ones found all over London. One hung-over conversation later Peacer is born.

THE KIND OF PIZZA YOU WANTED TO EAT AS A KID

Peacer Slice Shop

With limited experience, the friends set off with the aim of creating a quality delicious pizza with more than a hint of theatrics around it. “We want Peacer to be an experience, the kind of pizza you wanted to eat when you were a kid watching movies like teenage mutant ninja turtles. The kind of slice you need to grab with two hands”

Chef Leo Kattou hasn’t always been surrounded by purees and caviar, the mega-talented chef started his culinary journey at his family’s local fish & chip shop in Coventry.

From a very young age, Leo worked prepping potatoes & veg and cleaning the shop for pocket money. Soon Leo decided that food was the career for him, and wanted to train as a chef,

After a meeting with Michelin Star Simpson’s restaurant owner, the legendary Andreas Antona. Leo started as an apprentice, where his passion for food & appetite for hard work and doing the mundane prepping jobs seen him flourish.

Welcome chef Adam Bateman The Grand Hotel Birmingham

Hello & welcome to Birmingham food podcast Breaking Bread. This week’s episode is an interview with Adam Bateman. Executive chef of the brand new Grand Hotel Birmingham.

An awesome chat with a super-focused and mega-talented chef about a career that has taken him to the management team of Brum’s new 5-star hotel. The idea of creating something special & exciting which the people of Birmingham could be proud of was a driving force in Adams’s return to the city.

Madeleines at The Grand Hotel Birmingham

People who have never been to the famous Savoy in London will have seen or heard of the notorious American bar. In Madeleine’s at The Grand Hotel. Birmingham city center finally has a hotel cocktail bar worth talking about. A glamourous space, the perfect setting for knocking back an antique negroni or two.

Ribeye steak at Isaacs restaurant at the grand hotel Birmingham

Isaacs

Isaacs at The Grand Hotel is bringing serious New York vibes to Birmingham. Having visited the big apple a few times, I genuinely feel like Isaacs has captured the magic of that old-school NYC steak house.

From street food to Michelin star, Birmingham’s food scene has something for everyone. Where Brum’s food scene lies a little bare is the middle ground. There just aren’t enough places offering great food, made up of quality ingredients at an affordable price.

This is where Isaacs slots in, just look at their mouth-watering steak menu. Excellent cuts of beef sourced from one of the best butchers in the country (Aubery Allen) at pretty much the same money you would pay at your average chain restaurant.

An orchestra-backed cinema experience and live gigs already in the pipeline, Tom believes Luna will evolve to be a creative hub of excitement.

With such a vast space, with such a variety of events and uses Luna Digbeth decided that the F&B offering was going to be a high standard, far more superior to the usual offerings at event spaces. So whether you’re coming with a group of mates for some sunshine day drinking, an orchestra-backed cinema night, or a live gig. The awesome drinks menu heavily focused on excellent cocktails will always be available.

For food, Luna will host a variety of street food vendors. Using, and supporting local traders has been very important to owner Tom, and is on a mission to support as many as possible. Manager Of Birmingham City Centre Bacchus Bar On The Latest Episode Of Birmingham Food Podcast Breaking Bread

Hello & a very warm welcome back to Breaking Bread the podcast all about the amazing food & drink in Birmingham. This week Carl & Liam are joined by Liam’s very good friend & gaffer of Bacchus Bar, the awesome city centre boozer just off New St

Brendan has worked in pubs & bars for over 20 years and has won awards & recognition for investing in his team & turning struggling pubs around. Liam & Brendan take a fun trip down memory lane to where they first met, in a cheesy Solihull bar in 2006. They reminisce on some funny memories (not so funny at the time) during their time working at Weatherspoons.

Brendan offers some great advice & talks deeply about hospitality management and what it has been like to run a city-centre pub during covid before offering a fresh take on Tripadvisor which might make you realise that it may be more beneficial to work with Tripadvisor, as opposed to just hating on it.

TripAdvisor Facts

Love it or hate it, you had better be paying attention to what customers are saying about you on TripAdvisor. If you’re not, you are more than likely losing out on money.

A recent study had some fascinating results

  • 80% Of people asked, read at least 6-12 reviews prior to booking
  • 53% Would’t commit to booking before reading a review
  • 64% read reviews to find a restaurant

An example of the power of TripAdvisor can be found closer to home. In 2019 Michelin Star restaurant Adams was voted best restaurant in the UK by TripAdvisor. The very next day after the award being announced, Adams received 200 bookings.

Everything You Need To Know About New Restaurant 8 In Birmingham

Andrew Sheridan

Chef Andrew Sheridan new Birmingham Restaurant 8

Hello & welcome back to Breaking Bread the Birmingham-based food podcast presented by food-obsessed mates Liam & Carl, this week we were hugely excited to be joined by Andrew Sheridan the super-talented chef & owner of new exciting Birmingham restaurant 8.

Andrew tells us all about his career working his way up through some well-known kitchens, appearing on & getting to the final of BBC’s hit TV show Great British Menu before moving to Brum to take on the executive chef position at Craft & opening his amazing new restaurant

About 8 Restaurant Birmingham

The Restaurant

Chef Andrew Sheridan’s new canal-side restaurant can be accessed by an LED-lit door at the foot of the ICC. It is open Wednesday-Saturday with only one sitting at 8pm.

Birmingham’s hottest new restaurant 8, has one of the most original interiors I’ve ever seen. A neon infinity wall opposite a giant screen which plays a video that accompanies each course. The open kitchen takes centre stage, surrounded by a bar made up of 16 individually lit place settings.

The Food

The menu for 8 is an £88 8-course tasting menu, comprised of classic English ingredient-led dishes given the Andrew Sheridan twist. “Just food i really like to eat,” Andrew tells us. Every dish is based around the number 8, and manages to avoid being a tacky gimmick.

There is real thought & purpose to every dish. For example the stunning 8 days a week. A refreshing scallop & apple dish. Apple is the company that owns the rights to this famous Beatles tune, the Beatles hail from Andrews’s home city.

An equally impressive dish at 8 restaurant Birmingham is 08-10-2006. A moist hearty carrot cake basted in caramel made from carrot served with cream cheese & carrot jam. A take on the first thing Andrew ever cooked, which happened to be on the 8th October 2006.

Drinks

Everything about 8 Birmingham has been designed by chef Andrew Sheridan to reflect the journey of his career. Even the drinks pairing has been designed by him and ranges from wines to cocktails using carrot vodka to kombucha.

Carl has eaten & sampled some of the best meals & drinks pairings in the country, but swears blind that this was by far the best he ever had.
