Co-hosted by food-obsessed mates Liam & Carl, Breaking Bread gives you long-form interviews & discussions with the incredible people that make Brums food scene so amazing. This week we break bread with award-winning bar group Mission Mars director Neil Macleod.

We talk a bit about Neil’s career, starting out in his parents’ hotel in Inverness before moving on to start his own businesses, including Vodka Revolution & Revolucion de Cuba. Neil’s next chapter was launching Mission Mars & opening Albert’s Schloss a Bavarian beer palace in Manchester. We talk about their other brands including the much loved Rudy’s Pizza before we focus on what Birmingham can expect from Albert’s Schloss Birmingham.

Welcome To Birmingham Albert’s Schloss

Brummies like to have fun, Neil proclaims. Just one of the reasons they picked Birmingham as the location for their second beer palace Albert’s Schloss, and we are mega excited about it. We were very lucky to get a look around Brum’s most exciting opening of 2021, and we were seriously impressed.

Alpine-inspired interior with a Bavarian heart. Great big wooden benches made for dancing on in front of a sizeable stage which we are told will host live entertainment seven days a week. Giant cozy open fires, comfy sofas all surrounding the huge centerpiece of a bar slinging Chzech Pilsner in frozen glasses, home-brewed schnapps & cocktails.

What To Expect From Albert’s Schloss Birmingham

The Food

The menu at Albert’s Schloss is exactly what you would expect. Bratwurst, krokettes, schnitzel alongside epic dishes such as schweinshaxe (Pork Knuckle) & sauerbraten (slow braised short rib of beef). If the menu was predictable, the awesome quality of the food was less so. Pretty much everything on the is cooked in house, a team of bakers rise with the lark to bake pretzels, sourdough, garlic bread & bratwurst buns. Theres real talent in the kitchen brigade.

The Entertainment

A huge part of the magic of Albert’s Schloss is their live entertainment. The stage is rocking seven days a week. Birmingham is notoriously quiet Monday Tuesday, but with their Back To The Mein DJ sets & Kunst Kabaret they hope breath some life into the start of the week. Wednesday brings Baby Grand Slam, Thursday sees the best local live bands & Friday Saturday is DJ sets & the house band helping you dance the night away. Families become the centre of attention on Sundays with banging roast dinners washed down with live choirs & Disney inspiered classics.

The Drink

Albert’s Schloss Birmingham will be getting unpasturised Pilsner Urquell delivered straight from their Plzen brewery weekly, once delivered the beer must be consumed within seven days, not that it ever lasts that long Neil jests. Although big on beer Albert’s also have a wide selection of original cocktails & even a schnapps menu. Exlusively to Albert’s Schloss Birmingham is Ludwigs Tavern. The upstairs tavern hosts a curated list of bavarian biers, vermouths & some crazy cocktails.

Welcome to the first of our very special Corona Creative episodes. As well as our usual dive into the stories behind some of our favourite food & drink businesses, we are getting some useful hints and tips for you to try during the lockdown. This was an awesome chat that I enjoyed very much, Lydia is a unique and inspirational leader who gets the best from her team, which makes her two restaurants some of the brunch spots around. One thing most of us are missing right now is a proper cup of coffee, Lydia shares her tips for getting a decent cup at home. Unlike a lot of the home-coffee tips Lydia isn’t snobby or pretentious about coffee at home which makes her advice more accessible than most.

Brunch Ideas From Home

It is impossible to think of Warwick Street Kitchen or Saint Kitchen without thinking about their amazing brunch. For this Corona Creative series, I wanted to get some recipes from the best, and Lydia’s two restaurants are definitely two best places to get brunch, Lydia has some Brunch ideas for you and has very kindly shared some recipes for you.

The Perfect Poached Egg

An integral part of brunch is the humble poached egg, simple in theory but a nightmare to perfect. There are a few important things that you need to poach the perfect egg.


Quality and freshness, the fresher the better, also a good quality free-range egg. We use cacklebean eggs, who are based in the Cotswolds and pride themselves on raising completely free-range hens with the right food; a happy hen equals a tasty egg.


Pan volume, you need a pan that is the right volume for the eggs, for four poached eggs you want to use a pan that can hold 2 litres of water.


Vinegar, you need to add white wine vinegar to the water before bringing to the boil, for the 2 litres of water you need to add 4tbsp of white wine vinegar. (do not add salt to the water as this may break the egg up)


Temperature, bring the pan of water and vinegar to a rolling boil and reduce the temperature of the pan to a simmer, about half temp on the hob.


Add eggs, crack the eggs straight into the water, you don’t need to worry about spinning the water or cracking the egg into something first as long as there is enough vinegar in the pan and the water is the right temperature

Cook, 2 minutes, stay with the eggs and check after the first minute or so with a slotted spoon just raising them out of the water gently, each egg is different in size and weight so cook times may vary, the eggs should have a nice wobble and the white should be set, remember the egg will keep on cooking once out of the water so always aim on the side of under as they will
firm up.

Strain, take eggs out of pan, place onto a towel and let them sit for 30 seconds, this will get rid of any excess water.

Baba Ganoush Great Brunch Idea From Breaking Bread Podcast Lydia

Since we’ve taught you how to make the perfect poached egg, it only makes sense that we share some ideas on what to put them with. All of the following are great on toast with poached eggs. Enjoy and be sure to tag us (@Warwickstreetkitchen) in your food photos so we can see the results!

Baba Ganoush VG (Serves 2-4)

2 aubergines

Prick aubergines with a fork and then place directly on an open flame on top of a gas hob or under a grill on its highest setting until skins char and turn black and the flesh feels soft, turning every 5 minutes, this will take roughly 20 minutes. Once cool cut in half and scoop out the flesh with a spoon into a blender.

1 clove garlic
1/2 lemon, juice fresh
1 tbsp tahini
25ml rapeseed or olive oil

Add remaining ingredients into a blender with the aubergine and blend to a paste or pulse briefly, if you want more texture.

Roughly chop the coriander, mix through and season to taste.

Ras el hanout hummus VG (serves 2-4)

400g chickpeas, drained and washed
1/2 lemon, juice
1tbsp tahini
1 tbsp ras el hanout
1 clove garlic
30ml rapeseed or olive oil
1tsp salt

Strain chickpeas off and wash, leave to drain off any excess water. Place all of the ingredients above into a food processor and blitz until smooth.

30ml water

If necessary adjust the consistency of hummus with extra water, taste and season

Muhammara VG (serves 2-4)

1 red pepper
2 vine tomatoes
1 red chilli
1 small red onion
1tbsp smoked paprika
3 cloves garlic
1tbsp rapeseed or olive oil
salt

pre-heat oven to 200c

Deseed and quarter peppers, cut tomatoes into four and rough chop the chilli. Take the skin off the onions and cut into six wedges, place whole garlic cloves and all other ingredients on
to a baking tray, drizzle with oil and cover with paprika and salt. Place into oven and roast for 15 minutes. Mix everything well and roast for another 15 minutes, making sure you are keeping eye on it, you are looking for the vegetables to char slightly around the edges.
Remove from the oven and leave too cool.

60g walnuts


Place walnuts in a frying pan over medium heat and toast until they start to colour.


1tbsp rapeseed or olive oil
3tbsp pomegranate molasses
1 small handful fresh coriander
salt


Place roasted vegetables, toasted walnuts, and remaining ingredients into a food processor and pulse, you want the texture to be quite chunky but brought together into a paste. Season
to taste.

This will keep well in an air-tight container in the fridge for about a week.

Smashed avocado with harissa VG (Serves 2)

Smashed avocado:


2 avocado, peeled & de-stoned
1/2 fresh lime, juiced
salt & pepper


Place avocado in a bowl with the lime juice and mash, season to taste.


Pre-heat oven to 200c


Harissa:


This will make slightly more than what is needed but will keep in the fridge for a week


2 red pepper
4 red chillies


Roast peppers and chillies off whole in the oven for 20 – 30 minutes, you are looking for the skins to char and start to blacken, leave to cool. Peel and deseed peppers, take the stalks off
the chillies and any skin that comes away (don’t worry too much about removing all the skin)
and place in a food processor.


1 tbsp tomato puree

1 clove garlic
1 tsp smoked paprika
25 ml rapeseed or olive oil
1/2 fresh lime, juice and zest
1 small handful coriander
salt

Place the remaining ingredients in the food processor with the chillies and peppers and blitz until smooth, season to taste.

The Best Places To Eat In Kings Heath

The Birmingham suburb of Kings Heath is a place with many happy memories for me, not many of them food related though. The main reason for this, is that there just wasn’t much to get excited about food wise in Kings Heath back then. Sausage, beans and chips from the greasy spoon at the back of inshops was the highlight of a long day being dragged around Woolworths, Safeway and other shops that are now long gone.

Now Kings Heath is a completely different place and there are so many seriously good places to eat, it would be tough to choose the best place to eat in Kings Heath.

It was 2014 when I first sat up and took notice of the first hint that Kings Heath would go on to be the little foodie paradise it is today. My sister phoned me to say, “have you seen that French bakery in Kings Heath & Moseley?” When I told her, I hadn’t she pointed me in the direction of an ITV Series called ‘Britain’s Best Bakery’ where a little bakery called Maison Mayci had made it all the way to the final, and I really needed to try it.

So, I did, and Maison Mayci has been a favourite of mine ever since. Great coffee, fresh pastries, several different kinds of freshly baked bread and some of the best little tartlets I’ve seen, what’s not to love? Maison Mayci’s ‘Tarte au Citron’ is sooo good I find it near impossible to walk past the charming little shop without being tempted in.

Kings Heath wasn’t the first place that came to mind when considering somewhere to get a decent hearty brunch, but with the modern and stylish Bloom, that has changed. We finally got around to trying Bloom on a cold Saturday in December, and the hot aromatic coffee and warming comfort food soon took our mind off the weather outside.

Duck Hash

The menu has a great little selection of dishes which changes regularly, ranging from the traditional fry up to the less conventional eggnog porridge. So much so that choosing what to eat became a very difficult decision, and after all the studying I eventually ordered two dishes. Crispy but succulent duck, on a bed of creamy smooth sweet potato mash topped with crispy onions and a fried egg with a yolk just waiting to erupt and perfectly finished off with a dense fragrant broth that I enjoy so much I nearly take the pattern off the plate trying to scrape up every drop of it.

Eggnog Porridge

I could quite easily have settled our tab and left a very happy fatty, but there was no way I could pass up the chance of trying eggnog porridge. Probably more a dessert than brunch, its impossible not to smile when presented with this creamy porridge with a hazelnut puree, prunes and mini gingerbread men that instantly drew jealous glances from the other diners.

Pour Over Coffee

Bloom is well known for its excellent coffee and after a few flat whites I can vouch for that. Carl who was with me opted for a coffee I’d not seen before, ‘pour over coffee’ a drink that took coffee to a whole new scientific level. It made for a lighter more delicate drink but just as delicious.

Good Food X Good Coffee is the proud headline on their website, this is way too modest. Bloom is one of the first places that comes to mind when thinking of the best places to eat in Kings Heath.

There are other places on my list to visit in Kings Heath that I haven’t got to yet. Byzantium serves Mediterranean style tapas and comes very highly recommended by some of my foodie friends. Also recommended is bar & bistro Fletchers. With home cooked food and a great selection of drinks and cocktails in a relaxed environment, Fletchers is somewhere I will be trying very soon. Fletchers is the sister venue to one of Kings Heaths favourite places Kitchen Garden Café. Kitchen Garden is a cracking little cafe serving great home cooked food, and regularly hosting pop up events and live music. They also have an amazing deli so you can take their excellent food away with you.


Fresh on the Kings Heath foodie scene, and instant favourite of mine. is the incredible The Early Bird Bakery. Created by pastry chef Tim and two business partners, The Early Bird serves delicious cakes, pastries and savouries baked in house daily, using the finest ingredients sourced locally where possible.

Another great place to get coffee in an area where we are now spoilt for choice, for great coffee. I enjoyed a cracking flat white. I strongly recommend the apple and custard brioche muffin and the lemon and lime meringue with the perfectly balanced citrus, that covers a short and delicate pastry base topped with a cloud like meringue.

Another little favourite of mine is The Rainbow Cantonese restaurant at the bottom of Kings Heath. No airs and graces just tasty Chinese food in a relaxed, friendly restaurant, just a good little neighbourhood place worth a visit if you’re in the area.

The food scene isn’t the only thing that’s changing in Kings Heath, with a couple of new openings adding to the legendary Hare & Hounds. There’s never been a better time to go drinking in Kings Heath.

One of those recent openings being The Juke, a cosy little bar on York Road offering a fantastic selection of real ales, lots of them from the expanding number of Birmingham breweries. They also have a classic style juke box, and often host food pop ups like the great folks from Indian grill Zindiya and Ramen hero’s Koba-Ko.

Another recent addition to the independent bars in Kings Heath is Hop & Scotch situated just off the high street, serving great real ale and craft beers from local and national breweries. With a bottle shop promised for early this year.

If you’re not keen on beer, and wine is more your thing, then Grace + James is for you. The bar has an ever-changing wine list that focuses on natural and organic wine and a small deli menu of olives, cheese and breads to accompany the wine. Grace+James is another fantastic addition to Kings Heath.

There’s far more food and drink related things to do and explore in Kings Heath, more than I can list here.
