In this episode of Breaking Bread, we welcome Ash and Erin, the duo behind Rabbit, a unique 12-seat restaurant in Stirchley, Birmingham. We believe Rabbit is one of the best restaurants in Birmingham right now and wanted to sit down with Ash & Erin to find out more about this awesome place.

Who Are Ash & Erin?

In a world where everything moves too fast, where the culinary giants rarely look back, Ash and Erin’s story feels like a slow burn—a kind of magic that comes together when the stars align just right, or in their case when an Instagram message lights the spark. Ash, a chef hailing from the rugged landscapes of South Africa, and Erin, a UK-based PhD student immersed in the complexity of ceramics, never planned to uproot their lives. But life has a funny way of demanding the unexpected.

This wasn’t just another love story. This was about daring leaps, transcontinental moves, and leaving behind the familiar in pursuit of something rare and raw. Their first encounter wasn’t even in person; it was online, a casual conversation that turned into an eight-hour deep dive, exploring everything from food and art to what they each wanted from life. They didn’t realise it then, but that conversation laid the groundwork for a future neither saw coming. Soon enough, Ash packed up her life in South Africa, leaving behind her own restaurant and all the memories that came with it, to join Erin in Birmingham at the height of the pandemic.

What Is Rabbit?

Once in Birmingham, the real work began. They didn’t dive headfirst into opening a restaurant—they tested, tasted, and slowly built a reputation. Pop-ups became their canvas, each one a preview of something greater, each one pulling people in like moths to a flame. They finally found a home in the Stirchley neighbourhood, opening a 12-seat dining experience. This isn’t just a restaurant; it is a living, breathing space where people can feel like they belong.

Their small, intimate dining room—filled every night with a limited number of diners—puts every other white-tablecloth, industrial-sized kitchen to shame. It’s a reminder that food is more than sustenance. Ash brings her culinary craft, sharpened and honed on the intense fires of South Africa’s kitchen culture, to this 12-seater haven. Erin’s influence, meanwhile, brings a sense of structure, an almost engineering-like precision. But there’s a warmth, a sense of community, a grit that you just don’t get in places built on big budgets and endless PR.

Hello & a very warm welcome back to the Birmingham food podcast breaking bread. Co-hosted by food-obsessed mates Liam & Carl. Breaking Bread gives you long-form interviews & discussions with the incredible people that make Brums food scene so amazing. This week we chat with Chloe & Sarah from Verbena Stirchley.

Chloe left school focused on becoming a chef. After her time at UCB Chloe started building her experience. Training & working in a variety of kitchens at every level, from cafes to Michelin Star. After a couple of successful pop-ups, Chloe decided it was time to work for herself. She took on the lease of a building in the awesome village of Stirchley. What started out as a space to host pop-ups & events for the women in hospitality group. The space evolved to become a charming neighborhood restaurant called Verbena.

Sarah studied science at uni. Hosting dinner parties for her friends became the only part of uni she truly enjoyed. Sarah decided to leave university to follow her passion full time. Working in a restaurant kitchen Sarah found that she enjoyed the pastry section the most. Working at Resorts World Sarah learned from a team of mega talented pastry chefs. Unfortunately, the pandemic closed the kitchen she was working in. Chloe invited Sarah to help her get Verbena up and running when they bumped each other on Stirchley high St. The pair knew each other through the women in hospitality group.

What Is Verbena Stirchley?

Verbena is a beautiful relaxed restaurant serving simple modern dishes that taste incredible, at a very affordable price. Chloe opened the restaurant with the aim of doing things differently. Determined to move away from the high stress angry kitchens found in some restaurants. “I wanted to create a restaurant people want to work in.” Declares Chloe, Sarah quickly replies telling us how refreshing it is to work somewhere that’s kind and encourages you to be creative, and helps you be at your best. The ethos radiates through the whole team creating a loving warm restaurant that you want to visit often.

What Is Attic Brewery Stirchley

To avoid paying top whack for beer mates Sam & Oli became interested in home brewing. Before long Sam was fermenting grains in a simple homebrew kit in the Attic of his student house. Sam continued to brew the whole time he was at uni, with Oli often being the guinea pig for the mixed bag of beers he created.

After a time in a job, he didn’t enjoy Oli was convinced to come to Brum to meet Sam & make plans to open a brewery in Birmingham. Eventually settling on an industrial unit in the exciting village of Stirchley on the outskirts of Birmingham.

The unit is the perfect fit for Attic Brewery. Enough room to house the giant chrome tanks with room to grow with the company. The other half of the unit is the taproom. A place for customers to sample the freshly brewed pints as well as hosting markets, events & street food pop-ups

Asian Feast At Caneat Cafe

We all know what going out for dinner usually involves. Usually a romantic couple, or some friends, or a family sit at a table in a restaurant, and even though the restaurant may be full of diners, your focus is on your immediate company paying no attention to other diners

Not on this occasion, at Caneat café in the Birmingham suburb of Stirchley. An ‘Asian Feast’ pop up by the extremely talented chef Lap-fai Lee has brought a room full of strangers together. The whole dining room is buzzing as dish after dish brings a bigger smile to all our faces and gives us a reason to turn to the stranger on the opposite table to proclaim our love for the latest dish. The social importance of food in Asia is obvious when you look at countries like Thailand where eating alone is thought to attract bad luck, China where people regularly treat others to meals to make new friends or enhance established relationships, or even Korea where the Korean word for ‘family’ means ‘those who eat together’. I really shouldn’t be surprised by the inclusive nature of this Asian Feast.

I have admired Lap’s food for a long time on Instagram, his cookery classes at Loaf that look amazing and his legendary pop up feasts, so I jumped at the chance to join him for his latest pop up and took the other member of the Breaking Bread team Carl with me. The dining room was made up of tables of four so if you came as a pair, like us, you were put with another couple which helped add to the communal feast spirit.

The first course we were treated to some of the plumpest oysters I’ve ever seen. Topped with homemade lap cheong which is a slightly sweet Chinese sausage that is delicious, and works excellently with the oysters and the double brewed soy sauce used to dress the dish, which brings the whole thing together perfectly.

Next up is crab so fresh it could have swum to the restaurant, juicy prawns, lychee, topped with fried vermicelli, with a tiny gem of XO chilli jam wrapped in a crispy lettuce leaf.

One of my highlights of the night was up next, ‘Satay Chicken Hearts’. Chicken hearts are something I’ve never tried before, but after eating them here I have no idea why I’ve never tried them before. The satay marinade and accompanying sauce were delicious, but it was the chicken hearts themselves that really stole the show. Chicken hearts taste how I always hope chicken to taste, before being let down by the bland reality that is chicken breast. Strong and meaty the hearts stand up brilliantly to the delicately spiced satay. If the feast was to end here, I would have left a happy man.

As it turns out just when I thought Lap had peaked, a tidal wave of amazing food was about to engulf our table. For the main course we discover why the pop up was called a feast. Strong meaty monkfish tails that resemble giant white cliffs shooting out of the sea of slightly sour Assam stew, some giant deeply smoked beef cheeks relaxing in a perfectly spiced indulgent massaman curry, some freshness coming from the squid and charred aubergine salad, pickled cucumbers finished with an egg that has been marinated in a sweet master stock and served with as much white and red jasmine rice as you can manage. This is comfort food on a whole new level. The dishes all served in huge serving bowls inviting the whole table to just get stuck in and pile it high, which we all do. None of the usual tepidness that’s usually involved with sharing with strangers, Lap’s incredible style of food has ensured a family like atmosphere on the warm dining room.

To finish this delightful feast is a Matcha baked cheesecake. The Matcha is subtle and the cheesecake surprisingly light, which is a relief after the amount of food I’ve eaten. This truly was a feast and I roll out of Caneat exultant but absolutely fit to burst. I really can’t begin to imagine the amount of work that goes in to cooking a meal as great as this, I can only congratulate the chef on creating a meal where every component of every dish on every course was outstanding and the whole atmosphere, he managed to create was superb.
