After quitting his “boring corporate job”, Birmingham chef Alex Claridge decided to follow his dream and start cooking. After a few jobs in local pubs, restaurants & catering kitchens Alex started doing pop-ups at the brilliantly quirky Kitchen Garden Cafe in Kings Heath.

The Wilderness

Alex is no stranger to controversy or speed bumps. Very shortly after following his dream of opening his own restaurant ‘Nomad’, Alex was contacted by the lawyers of American hotel NoMad demanding Alex changes the name.

Shortly after the restaurant reopened as Wilderness. Like all great entrepreneurs, Alex learned from this disappointment and used it as motivation to turn Wilderness into one of the best restaurants in Birmingham.

A New Mature Wilderness

The three AA Rosette restaurant prides itself on being a reflection of Birmingham with plenty of multicultural influences on the menu. Alex has big plans to double down on this “Birmingham story through food ” philosophy when he moves the restaurant on to its next chapter. A move into the old Nocturnal Animals venue on Bennetts Hill in the city centre, in what will be a more mature & refined version of the excellent Wilderness we know & love.

Stuart Deeley is Birmingham born & bred. After training at Halesowen college, the mega-talented chef started his kitchen career in one of Jamies Italians, before being told by his head chef that he might be better suited to high-end cooking.

After a few twists & turns and a couple of hard lessons learned, Stuart landed a dream job at the legendary Michelin Star kitchen of Simpsons in Edgbaston. Under the training & mentorship of head chef Luke Tipping, Stuart flourished working his way from commis to junior sous.

After a few more tough life lessons Stuart ended up meeting another ambitious Birmingham chef, the charismatic Alex Claridge. Alex had opened his own restaurant, The Wilderness and took Stu on before making him, his head chef when Alex moved the restaurant to the Jewellery Quarter.

Alex has a knack for bringing out the most creative sides of his chefs & backing them with confidence and freedom to allow them to grow. Stuart flourished in this environment. Embracing his Birmingham cultural influences and blending them with his more classical cooking techniques resulting in the fusion style the Masterchef judges were blown away by.

Masterchef The Professionals Winner 2019

Stuart Deeley gained great support over the series due to his humbleness and quiet belief in the dishes he created. With dishes like the lamb faggots, Stu genuinely wanted his food to represent the city he was born in.

Stu was the absolute picture of calm while serving his pork belly main to a room full of Michelin Star chefs, and received some of the highest praise I have seen on the show.

Action for Refugees is a network of local community groups who are committed to supporting refugees and asylum seekers.

We are not-for-profit charitable organisations working with local individuals, groups, and schools to help refugees. We deliver a range of community fundraising events and promote awareness, befriending, support and solidarity for refugees and asylum seekers living in Birmingham and the Black Country and those seeking safe passage across Europe

This Cookbook Belongs To Us

We first came across this wonderful charity, when they were hosting an event in a park near us which involved lots of local cafes & eateries. After looking into the charity we found out they actually have a fantastic cookbook.

We have always believed food and in particular sharing food to be a very powerful way of breaking down barriers in the community. We heard in our podcast with the people behind crazy gin, that their parents used to cook for all their neighbours. This helped settle them into their new community.

This cookbook is about that. Birmingham has such an amazing mix of nationalities and cultures, and this cookbook is a collection of recipes & stories from all different nationalities who have settled in Birmingham.

We celebrate the many cultures and cuisines enjoyed in Birmingham and Smethwick, from home-cooked meals passed through the generations, to show-stopping restaurant recipes. All proceeds from this book will aid refugees in transit. BUY THE BOOK HERE

Kray shares his interesting story with us, starting with his rocky beginnings and struggles with his dyslexia. Kray started off training under the talented team at Michelin starred Purnell’s, learning a great deal from his mentor & past podcast guest Luke Butcher

The next step for this talented young chef was a trip to Leeds to work in one of the UK’s most unique restaurants, the Michelin Starred Man Behind The Curtain. Under the leadership of Michael O’Hare Kray continued to perfect his cooking skills, and quickly become Head Chef.

Great British Menu

In 2019 Kray competed in BBC’s chef competition Great British Menu. Kray was brilliant on the show scoring a 10 from Michelin Star chef judge Paul Ainsworth. With dishes like ‘Fire In The Booth’ and ‘Shharonnn’ he absolutely nailed the music brief, and was unlucky to lose out in the final.

HELLO FOODIES, 

This episode I have a chat with massively talented, great guy Sebastian Clough. Sebastian is a Baker and owner of Four Oaks bakery Onthebreadline. The bakery creates quality handcrafted baked goodies and breads. An interesting chat where we discuss taking a talent and skill, and turning it into a business. 

One of the big reasons i wanted to speak to Sebastian on our podcast, is because i’m a huge fan of his food. His fresh bread and baguettes are fantastic and the flavoured muffins are a real treat. Especially the Kinda and the M&M muffins. If you find yourself over this side of town be sure to pay him a visit, but get there early as they do tend to sell out.

A Quick Note About The Sound Quality Of This Episode

Unfortunately when we organised a date to sit down and record this chat, i failed to notice that i had organised it for November 5th. Bonfire night. To make things worse, Sebastian’s bakery is across the road from a school which was holding a giant fireworks display. So a complete rookie error on my part, but its a learning curve. Thankfully the display finishes four minutes in, and we have a great little chat.
