This week we break bread with award-winning chili sauce legend Pip creator of Brum institution Pip’s Hotsauce

We start by diving into Pip’s early life & food experiences including the epic sounding ‘dad sandwich’ before we get into Pip’s time at university and her travelling. While travelling & living in the US Pip developed an obsession for hot sauce.

Pip’s Hotsauce Is Born, La Boca del Diablo

While eating out one evening Pip got annoyed by the lack of any decent hot sauces around, not only in the venue she was eating in, but the country in general. Challenged by her partner Matt, Pip wrote down on the back of a napkin what she thought a good sauce should taste like & the ingredients she believed would achieve this.

A few tweaks & this rough recipe went on to become a massive hit with the people of Brum as Pip sold her Pip’s Hotsauce at farmers market in the city. In 2017 La Boca del Diablo’s awesomeness was recognised by the Guild Of Fine Foods & awarded a two star Great Taste Award. A very well balanced sauce with a subtle well rounded heat, heavy on the garlic and chilli with a quiet smokiness, this sauce goes well on EVERYTHING!

Creating New Sauces & Collabs

Being a creative, it wasn’t long before Pip was experimenting with new recipes to add to the Pip’s Hotsauce collection. As summertime approached it seemed logical to create a BBQ sauce. While living in Las Vegas A neighbour shared her family recipe for BBQ sauce with Pip, a recipe that became the base for La Barbacoa.

Collabs have become a feature for Pip’s Hotsauce. Born out of a desire to support people & businesses that she loves, the resulting sauces have been epic. The boca Grande sweet pineapple sauce collab with The Plough in Harborne & the folka wolf/provide Cure for Life Caribean inspired CBD sauce both won Great Taste Awards.

Neil’s next chapter was launching Mission Mars & opening Albert’s Schloss a Bavarian beer palace in Manchester. We talk about their other brands including the much loved Rudy’s Pizza before we focus on what Birmingham can expect from Albert’s Schloss Birmingham.

Welcome To Birmingham Albert’s Schloss

Brummies like to have fun, Neil proclaims. Just one of the reasons they picked Birmingham as the location for their second beer palace Albert’s Schloss, and we are mega excited about it. We were very lucky to get a look around Brum’s most exciting opening of 2021, and we were seriously impressed.

Alpine-inspired interior with a Bavarian heart. Great big wooden benches made for dancing on in front of a sizeable stage which we are told will host live entertainment seven days a week. Giant cozy open fires, comfy sofas all surrounding the huge centerpiece of a bar slinging Chzech Pilsner in frozen glasses, home-brewed schnapps & cocktails.

What To Expect From Albert’s Schloss Birmingham

The Food

The menu at Albert’s Schloss is exactly what you would expect. Bratwurst, krokettes, schnitzel alongside epic dishes such as schweinshaxe (Pork Knuckle) & sauerbraten (slow braised short rib of beef). If the menu was predictable, the awesome quality of the food was less so. Pretty much everything on the is cooked in house, a team of bakers rise with the lark to bake pretzels, sourdough, garlic bread & bratwurst buns. Theres real talent in the kitchen brigade.

The Entertainment

A huge part of the magic of Albert’s Schloss is their live entertainment. The stage is rocking seven days a week. Birmingham is notoriously quiet Monday Tuesday, but with their Back To The Mein DJ sets & Kunst Kabaret they hope breath some life into the start of the week. Wednesday brings Baby Grand Slam, Thursday sees the best local live bands & Friday Saturday is DJ sets & the house band helping you dance the night away. Families become the centre of attention on Sundays with banging roast dinners washed down with live choirs & Disney inspiered classics.

The Drink

Albert’s Schloss Birmingham will be getting unpasturised Pilsner Urquell delivered straight from their Plzen brewery weekly, once delivered the beer must be consumed within seven days, not that it ever lasts that long Neil jests. Although big on beer Albert’s also have a wide selection of original cocktails & even a schnapps menu. Exlusively to Albert’s Schloss Birmingham is Ludwigs Tavern. The upstairs tavern hosts a curated list of bavarian biers, vermouths & some crazy cocktails.

From Birmingham collage of food to GQ Sommelier of year, brand ambassador for one of the best champagnes in the world & general manager of some of the best Michelin level fine dining restaurants in the city. Sonal is one of the most respected talents in the industry.

Sonal’s Career

Sonal’s love for hospitality materialised when he started training at Birmingham’s famous collage of food. After gaining real-world experience in high-end restaurants in Ireland Sonal returned to Brum, where he made it his mission to work for Glynn Purnell. A decision he made instantly after eating the Brummie legends food.

After constant hounding, the Purnells restaurant manager relented & gave Sonal a job in his front-of-house team. During his time at Purnell’s Sonal became a student of hospitality, a sponge for knowledge & worked his way up to general manager.

On his way to becoming manager Sonal started paying more attention to the wine side of front of house. Wine quickly became his passion & his talent for matching wine to food & love of champagne gained Sonal Clare the role of ambassador for Krug as well as been named sommelier of the year by GQ magazine.

After a successful time at legendary Purnells, Sonal decided to take on new challenges at the exciting & original fine dining restaurant The Wilderness in Birmingham’s JQ. The Wilderness brings the opportunity for Sonal Clare to show more of his creative personality. Along with mega talented cocktail magician Rob Wood Sonal has been challenged to disrupt the traditional drinks pairing, a challenge that has truly captured Sonals imagination.

Lockdown was a time of isolation for a lot of people. It was also the time Farah & Rory decided to put their talents together and open a coffee shop as a pop-up in the vibrant Stirchley village. Pause offered people great coffee, great baked treats, and a friendly face with some welcome conversation at one of the loneliest times.

After a hugely successful pop-up Pause moved to a permanent home in Bournville, sharing with the awesome Isherwood. It is here you can enjoy Rory’s coffee creations such as the Hemmingway, alongside the notorious cinnabuffins brownies & cookies lovingly baked by Farah.

An awesome chat with a super-focused and mega-talented chef about a career that has taken him to the management team of Brum’s new 5-star hotel. The idea of creating something special & exciting which the people of Birmingham could be proud of was a driving force in Adams’s return to the city.

People who have never been to the famous Savoy in London will have seen or heard of the notorious American bar. In Madeleine’s at The Grand Hotel. Birmingham city center finally has a hotel cocktail bar worth talking about. A glamourous space, the perfect setting for knocking back an antique negroni or two.

Isaacs at The Grand Hotel is bringing serious New York vibes to Birmingham. Having visited the big apple a few times, I genuinely feel like Isaacs has captured the magic of that old-school NYC steak house.

From street food to Michelin star, Birmingham’s food scene has something for everyone. Where Brum’s food scene lies a little bare is the middle ground. There just aren’t enough places offering great food, made up of quality ingredients at an affordable price.

This is where Isaacs slots in, just look at their mouth-watering steak menu. Excellent cuts of beef sourced from one of the best butchers in the country (Aubery Allen) at pretty much the same money you would pay at your average chain restaurant.

Putting The Covered Wagon Back At The Heart Of The Community

Pubs were once the heartbeat of communities in the UK, a place to get to know your neighbors and build a real relationship with your local area and the people in it. For Harm that’s exactly what the Covered Wagon Moseley was to his local neighborhood when he was growwwing up.

So when the opportunity came to own his once local, Harm jumped at the chance with the objective of restoring it as somewhere brilliant for the local community to use and be proud of

The Food

For The Covered Wagon to be a success, Harm knew it had to have a great food offering. Inspired by memories of family meals growing up and the popularity of Desi pubs, Harm drew up a menu packed with authentic Indian curries and sizzling mixed grills.

It was important from the beginning that all dishes use only the finest quality ingredients. The Butter chicken has become infamous to curry lovers all over south Birmingham, while the Wagon Grill Special Sizzler has become legendary.
